Up to three million gingerbreads come out of the oven every day during the peak season at the market leader Lebkuchen-Schmidt. Weighing the ingredients and mixing the mass is still done by hand on a large scale, while the wafers are coated and baked by machine. Nuremberg Gingerbread and Aachen Printen have a long tradition, but they also like to experiment with new trends. This should also boost sales outside the main season.
